Paleo Crockpot Beef and Broccoli

If you have never used a crockpot you need to get one immediately. Throw a bunch of stuff in, use cheap meat, leave for work, come home to a glorious smell, tender meat and dinner ready to go. I am a huge fan and think it a must for parents, college students, basically everyone. Anyone who has ever tried to cook with a kid hanging off your leg or crying because they missed you all day and now you're trying to cook knows how hard it is. Then you have the guilt complex of needing to cooking during the precious few hours you get to see your kid since you've been at work all day... This guilt complex can't be just me!! Anyway, this is delicious, easy, and can be added to brown rice if you are not paleo or need to make it stretch a few more days.




Paleo Crockpot Beef and Broccoli

Serves 4-6

- 1.5 lbs flank steak (or skirt steak), cut against the grain in thin strips 
- 1/3 cup arrowroot powder 
- 2 Tblsp avocado oil (or olive oil)
- 1 tsp. minced fresh ginger
- 2 garlic cloves, minced 
- 1/2 cup coconut aminos (or gluten free soy sauce)
- 1/4 cup water
- 1/4 - 1/2 cup honey (I have made it with less and it works fine!)
- 1 Tblsp Siracha (or other hot sauce)
- 3 green onions, diced 
- 2 large carrots, small dice (about 1 cup)
- 2-3 broccoli crowns cut into florets 

Directions:
1. In the crockpot mix the steak and arrowroot powder until it is evenly coated.

2. Whisk the remaining ingredients except the carrots, onion and broccoli and pour over the steak.
3. Add the carrots and onion. 
4. Cook on low 4-5 hours or on high 2-3 hours. During the last half hour add the broccoli and stir.

  1. This looks delicious! Did you serve it with a side dish? I guess rice is out of the question if you want the meal to be Paleo!

    1. I eat brown rice occasionally, especially if I am training a lot, and my daughter LOVES rice, so I have eaten it with that. I have also used regular cauliflower rice... but the fried rice in the comment above sounds even better!

    2. I made this over the weekend with only 2 tablespoons of honey and I thought it was fine... I think I would cut it in half in the future because I like the sweetness but I wanted to let you know!

  3. Can you use this recipe as a freezer meal? Throw everything in frozen and cook on low for a longer amount of time? Thanks!

    1. Although I have never done that because I don't have a good freezer, I don't see why that wouldn't work. Steak is easily frozen and the vegetables/sauce would be fine too. I would still probably add the broccoli at the end, or cook is separately, because it would turn to mush sitting in a crockpot all day.

  4. This was so good! I cut the honey to a little less than 1/4 cup and it was delicious. My husband and I raved about it. I'll definitely be making it again in the future. We had it over cauliflower rice. Thanks for sharing the recipe.

  5. Can you sub tapioca flour? All I have!

    1. Yes! You can use the same amount in place of the Arrowroot Powder. The only difference is tapioca flour doesn't freeze/thaw as well so if that was your plan I would hold off. :)

  9. I am making this right now. I am a little skeptical about the flavor profile. The squash may be a litle light for the sauce. Just pulled it out of the broiler. Looks good waiting for the wife.
