Paleo Crockpot Beef and Broccoli
Serves 4-6
- 1.5 lbs flank steak (or skirt steak), cut against the grain in thin strips
- 1/3 cup arrowroot powder
- 2 Tblsp avocado oil (or olive oil)
- 1 tsp. minced fresh ginger
- 2 garlic cloves, minced
- 1/2 cup coconut aminos (or gluten free soy sauce)
- 1/4 cup water
- 1/4 - 1/2 cup honey (I have made it with less and it works fine!)
- 1 Tblsp Siracha (or other hot sauce)
- 3 green onions, diced
- 2 large carrots, small dice (about 1 cup)
- 2-3 broccoli crowns cut into florets
Directions:
2. Whisk the remaining ingredients except the carrots, onion and broccoli and pour over the steak.
4. Cook on low 4-5 hours or on high 2-3 hours. During the last half hour add the broccoli and stir.

This looks delicious! Did you serve it with a side dish? I guess rice is out of the question if you want the meal to be Paleo!
ReplyDeleteI eat brown rice occasionally, especially if I am training a lot, and my daughter LOVES rice, so I have eaten it with that. I have also used regular cauliflower rice... but the fried rice in the comment above sounds even better!

I made this over the weekend with only 2 tablespoons of honey and I thought it was fine... I think I would cut it in half in the future because I like the sweetness but I wanted to let you know!

Can you use this recipe as a freezer meal? Throw everything in frozen and cook on low for a longer amount of time? Thanks!
ReplyDeleteAlthough I have never done that because I don't have a good freezer, I don't see why that wouldn't work. Steak is easily frozen and the vegetables/sauce would be fine too. I would still probably add the broccoli at the end, or cook is separately, because it would turn to mush sitting in a crockpot all day.

This was so good! I cut the honey to a little less than 1/4 cup and it was delicious. My husband and I raved about it. I'll definitely be making it again in the future. We had it over cauliflower rice. Thanks for sharing the recipe.

Can you sub tapioca flour? All I have!
ReplyDeleteYes! You can use the same amount in place of the Arrowroot Powder. The only difference is tapioca flour doesn't freeze/thaw as well so if that was your plan I would hold off. :)

ReplyDeleteI am making this right now. I am a little skeptical about the flavor profile. The squash may be a litle light for the sauce. Just pulled it out of the broiler. Looks good waiting for the wife.
